The fascinating harvest of the oysters

The native oysters need between four to five years to mature and can only be harvested between April and September. The rock oysters, on the other hand, need 2 years until they can be harvested throughout the year.
To ensure that the oysters are in a perfect condition for you, the fisher clean and purge them for 42 hours, where they are given a steady stream of fresh sea water, which even passes through a UV filter. Now when the oysters are cleaned they are ready to be dispatched or collected.
